This Easy Asian Cucumber Salad is a refreshing and flavorful dish that makes a perfect side for any meal. The combination of cucumbers with sesame oil, soy sauce, and chili oil creates a deliciously unique flavor.

Cucumber Salad:

  • 5 Persian cucumbers
  • 1/2 tsp salt

Dressing:

  • 1/2 tbsp sesame oil
  • 3/4 tbsp light soy sauce
  • 1/21 tbsp sugar (see notes)
  • 3/4 tbsp rice vinegar
  • 1 tbsp chili oil
  • 1/2 tbsp sesame seeds
  • 1/2 tbsp garlic, minced (optional)

Instructions

  1. Rinse and slice the cucumbers: Rinse the cucumbers and slice one end at an angle. Continue slicing to your desired thickness.
  2. Add salt and refrigerate: Place the sliced cucumbers in a bowl, sprinkle with salt, mix well, and refrigerate for at least 20 minutes to draw out excess water.
  3. Drain and rinse: Drain the water from the cucumbers, give them a quick rinse, and return them to the bowl.
  4. Prepare the dressing: Add sesame oil, soy sauce, sugar, rice vinegar, chili oil, sesame seeds, and garlic to the cucumbers.
  5. Combine and serve: Stir the salad until well coated with the dressing. Serve and enjoy!

Notes

  • You can adjust the amount of sugar based on your preference for sweetness.
