Dream cookies, also known as Drömmar, are delicate Swedish butter cookies with a light, crumbly texture and a subtle vanilla aroma. These melt-in-your-mouth treats are made with butter, sugar, vanilla, vegetable oil, and baker’s ammonia, giving them their unique softness and lovely golden color. Perfect for pairing with coffee or tea, these cookies are simple to make and perfect for any occasion.

  • 50 g Butter (1.75 oz), room temperature
  • 90 g Sugar (2/3 cup / 1½ dl)
  • 2 tsp Vanilla sugar (or vanilla extract)
  • 3 tbsp Vegetable oil
  • 1/2 tsp Baker’s Ammonia
  • 120 g All-purpose flour (3/4 cup / 2 dl)

Instructions

  1. Preheat oven: Preheat your oven to 150°C (300°F) to ensure it reaches the correct temperature for baking the cookies evenly.
  2. Mix butter and sugars: In a mixing bowl, cream together the room temperature butter, sugar, and vanilla sugar until the mixture becomes smooth and slightly fluffy, incorporating air for a tender cookie.
  3. Add vegetable oil: Gradually pour in the vegetable oil while continuing to mix, which helps to create a soft dough with the right consistency.
  4. Combine baker’s ammonia with flour: Take a small portion of the flour and mix it with the baker’s ammonia to help evenly distribute the leavening agent through the dough.
  5. Add flour mixture to dough: Incorporate the baker’s ammonia and flour mixture into the dough, followed by the remaining flour. Work the dough gently until all ingredients are well combined and smooth.
  6. Form dough balls: Roll the dough into small balls, about 2-3 cm in diameter, and place them evenly spaced on a baking sheet lined with parchment paper or a non-stick baking mat.
  7. Bake: Place the baking sheet in the middle of the preheated oven and bake the cookies for 15-17 minutes. The cookies should be lightly golden and delicate to touch.
  8. Cool: Once baked, remove the cookies from the oven and allow them to cool on the baking sheet. This helps them set and prevents breaking.

Notes

  • Baker’s ammonia is a traditional leavening agent for these cookies and gives a unique texture and aroma. If unavailable, a substitute of baking powder may be used but will alter the texture slightly.
  • Vanilla sugar can be substituted with vanilla extract. If using extract, 1 teaspoon is sufficient.
  • Ensure the butter is softened but not melted to achieve the best dough consistency.
