Macaroni:

  • 1 lb macaroni

Vegetables:

  • 2 cups diced cucumber
  • 1 cup diced green pepper
  • 2 tablespoons grated onion

Additional:

  • 1/2 cup sweet pickle relish
  • 2 hard-boiled eggs, chopped
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1/4 cup milk
  • Kosher salt and freshly ground black pepper, to taste

Instructions

  1. Cook Macaroni: In a large pot of salted boiling water, cook the macaroni until al dente. Drain and rinse with cold water. Place in a large bowl.
  2. Mix Ingredients: Add cucumber, green pepper, relish, and onion to the macaroni. Mix well and set aside.
  3. Prepare Dressing: In a small bowl, combine mayonnaise, sour cream, milk, salt, and pepper. Stir until well mixed.
  4. Combine Salad: Pour the dressing over the macaroni mixture. Stir to combine. Add chopped eggs and gently fold them in.
