A comforting and hearty Cheesy Ground Beef and Potatoes skillet dish, featuring tender potatoes cooked with savory ground beef, aromatic spices, and topped with melted cheddar cheese for a satisfying meal perfect for weeknights.

Ingredients

Scale

Meat and Dairy

  • 1 lb ground beef
  • 1 cup shredded cheddar cheese

Vegetables & Aromatics

  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 medium potatoes, peeled and diced
  • 1 tablespoon fresh parsley, chopped

Seasonings & Liquids

  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 cup beef broth

Instructions

  1. Brown the Beef: Heat the olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks to ensure even cooking and a nice crumbly texture.
  2. Sauté Aromatics: Add the chopped onion and minced garlic to the skillet. Cook for 3-4 minutes until the onions soften and release a fragrant aroma, blending their flavors with the beef.
  3. Add Potatoes and Season: Stir in the diced potatoes along with salt, black pepper, paprika, and dried oregano. Mix everything well to coat the potatoes evenly with the spices.
  4. Simmer: Pour in the beef broth and cover the skillet. Lower the heat to low and let it cook for 20-25 minutes until the potatoes are tender and most of the liquid has absorbed, allowing the flavors to meld.
  5. Melt Cheese: Sprinkle the shredded cheddar cheese evenly over the beef and potatoes. Cover the skillet again and cook for 2-3 minutes until the cheese melts into a creamy, gooey topping.
  6. Garnish and Serve: Remove from heat and garnish with fresh parsley for a bright, fresh finish before serving hot.

Notes

  • For a richer flavor, use sharp cheddar cheese.
  • You can substitute beef broth with vegetable broth for a lighter taste.
  • To make it spicier, add a pinch of cayenne pepper or chili flakes.
  • Use Yukon Gold potatoes for a creamy texture or russet potatoes for a fluffier bite.
  • This dish can be prepared ahead and reheated; just add a little broth to moisten before warming.
