This Cucumber Caesar Salad is a refreshing twist on the classic Caesar salad, using crisp mini cucumbers as the star ingredient. Tossed with Parmesan cheese, turkey bacon, and a flavorful Caesar dressing, this salad is a perfect side dish for any meal.

Cucumber Caesar Salad:

  • 16 ounces mini seedless cucumbers

Additional Ingredients:

  • 1 cup Parmesan cheese, shaved
  • 4 ounces turkey bacon, cooked & crumbled
  • 1/2 Tablespoon butter, salted
  • 1/4 teaspoon panko breadcrumbs
  • 1/2 cup Caesar dressing, or to taste

Instructions

  1. Toast the Breadcrumbs: In a small skillet, melt 1/2 tablespoon of butter over medium heat. Add the breadcrumbs and toast, stirring regularly, until golden brown. Remove from heat.
  2. Prepare the Salad: Slice the cucumbers into thin slices and transfer to a large bowl. Add 1/2 cup shaved Parmesan, 1/4 cup crumbled turkey bacon, 2 tablespoons of toasted breadcrumbs, and Caesar dressing. Toss until evenly coated.
  3. Garnish and Serve: Garnish the salad with additional Parmesan, turkey bacon, and breadcrumbs before serving.
