  • ½ teaspoon kosher salt
  • 2 teaspoons garlic, minced
  • ½ teaspoon onion powder
  • ½ teaspoon red pepper flakes
  • 1 teaspoon fresh rosemary, chopped
  • 2 cups (200 g) parmesan cheese, grated, divided
  • parsley, chopped for garnish

Instructions

  1. Preheat the oven: Preheat the oven to 400°F and line a sheet pan with parchment paper.
  2. Prepare the carrots: Cut the carrots into 2-inch sections, then slice each section in half lengthwise.
  3. Make the seasoning: In a large bowl, combine olive oil, salt, garlic, onion powder, red pepper flakes, and rosemary. Mix well and add the carrots, tossing to coat.
  4. Add the cheese: Sprinkle 1 ½ cups of parmesan cheese over the parchment paper on the sheet pan.
