Ingredients

Scale

Chicken

  • 2 lb. boneless skinless chicken breasts (about 4 chicken breasts)
  • 1/4 cup all purpose flour
  • 1/4 cup cilantro, chopped, plus more for topping

Cooking Oils and Flavorings

  • 2 tbsp coconut oil
  • 1 tbsp olive oil
  • 1 garlic clove, minced

Sauce

  • 1 cup coconut milk
  • 2/3 cup chicken broth
  • 1 tbsp brown sugar (or substitute coconut sugar)
  • 2 limes (juice divided)

Garnish

  • 1 green onion, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare it for baking the chicken later.
  2. Prepare Skillet: Heat a large oven-safe skillet or Dutch oven over medium heat, then add coconut oil and olive oil until melted and hot.
  3. Coat Chicken: In a shallow bowl, mix the all-purpose flour and chopped cilantro. Dip each chicken breast into the flour mixture, ensuring it’s well coated on all sides.
  4. Sear Chicken: Place the coated chicken breasts into the hot skillet and sear for 3-4 minutes per side until they develop a slight golden-brown crust. As the chicken nears doneness, add the minced garlic and sauté for about 30 seconds to release its aroma.
  5. Mix Sauce: While searing, combine coconut milk, chicken broth, brown sugar, and the juice from 1 lime in a bowl, mixing until smooth.
  6. Bake Chicken: Remove the skillet from heat, pour the coconut milk mixture evenly over the chicken breasts. Transfer the skillet to the preheated oven and bake for 10-15 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).
  7. Finish and Garnish: Remove the skillet from the oven and drizzle with juice from the remaining lime. Season with salt and pepper to taste. Garnish with extra chopped cilantro and chopped green onions before serving.

Notes

  • Make sure to use an oven-safe skillet for searing and baking to avoid transferring the chicken to another dish.
  • You can substitute brown sugar with coconut sugar for a more natural sweetener option.
  • Ensure chicken breasts are patted dry before coating to achieve a better crust.
  • For an extra kick, add a pinch of red pepper flakes to the sauce mixture.
  • Serve this dish over jasmine rice or alongside steamed vegetables for a complete meal.
