Sweet Potatoes

  • 2 small (or 1 large) sweet potatoes, peeled and cubed
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • Olive oil spray

Bowls

  • 1/2 pound ground beef
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 tsp paprika
  • 1/4 tsp chili flakes
  • 1/2 tsp salt
  • 1 cup cottage cheese
  • 1 avocado, cubed
  • 1/2 tbsp hot honey
  • Chili flakes to taste

Instructions

  1. Prepare The Sweet Potatoes: Peel and cut the sweet potatoes into small cubes. Season them with 1/2 teaspoon of garlic powder, 1/2 teaspoon of paprika, and 1/4 teaspoon of salt. Lightly spray the potatoes with olive oil and cook them in the air fryer at 375°F (190°C) for 15 minutes or until they are golden and tender.
  2. Cook The Ground Beef: In a skillet over medium-high heat, add the ground beef along with 1 teaspoon onion powder, 1/2 teaspoon garlic powder, 1 teaspoon paprika, 1/4 teaspoon chili flakes, and 1/2 teaspoon salt. Stir occasionally and cook until the beef is fully cooked and slightly browned, about 8-10 minutes.
  3. Assemble The Bowls: Divide the roasted sweet potatoes and cooked ground beef evenly between two bowls. Add half of the cubed avocado to each bowl, then top each bowl with 1/2 cup of cottage cheese. Drizzle each with 1/4 tablespoon of hot honey and sprinkle chili flakes to taste for an extra kick.

Notes

  • You can substitute the hot honey with regular honey for a milder flavor.
  • If you don’t have an air fryer, roast the sweet potatoes in a preheated oven at 400°F (200°C) for 20-25 minutes.
