Pasta:
- 1 box (16 oz) elbow pasta
Cheese Sauce:
- 4 tablespoons salted butter
- 1/4 cup all-purpose flour
- 2½ cups whole milk
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- 1 cup shredded yellow cheddar cheese (mild, medium, or sharp)
- 1 cup shredded white cheddar cheese
- 8 slices processed American cheese (cut into smaller chunks)
