Irresistible Cinnamon Roll French Toast Bites that are crispy on the outside, soft on the inside, and coated in a sweet cinnamon sugar mixture. Perfect for a decadent breakfast or brunch treat!

Bread Cubes:

  • 4 thick slices white bread (preferably a day old, about 1″ / 2.5 cm thick)

Egg Mixture:

  • 2 large eggs (or 3 small eggs)
  • 1/4 cup milk
  • Pinch of salt

Cinnamon Sugar Coating:

  • 1/4 cup granulated sugar
  • 1/2 tsp ground cinnamon

Other:

  • 3 tbsp butter, divided
  • Maple syrup, for serving (not optional!)

Instructions

  1. Prep the Bread

    Trim the crusts off each bread slice and cut them into 9 equal cubes per slice. Keeping them uniform helps them cook evenly and get beautifully golden.

  2. Make the Egg Mixture

    In a medium bowl, whisk together the eggs, milk, and a pinch of salt until smooth.

  3. Mix the Cinnamon Sugar

    In a shallow bowl, combine the sugar and cinnamon. Set aside—this is your sweet coating for the warm bites.

  4. Fry the First Batch

    Heat ½ tablespoon of butter in a nonstick skillet over medium-high heat. Once melted (but not browned), toss half of the bread cubes in the egg mixture. Let any excess drip off, then transfer to the hot pan. Cook for 2–3 minutes, using a spatula or spoon to toss occasionally until all sides are golden and crispy.

  5. Coat in Cinnamon Sugar

    Immediately transfer the hot cubes into the cinnamon-sugar mix and toss well to coat every piece. Place the finished bites on a serving plate.

  6. Repeat

    Add another ½ tablespoon of butter to the pan and repeat the process with the remaining bread cubes.

  7. Serve with Maple Syrup

    Serve the warm French Toast Bites with a generous drizzle or side of maple syrup. The combination of crispy coating and syrupy sweetness is irresistible.
