Instructions

  2. Shape the Cruffins: Roll the buttered pastry sheet into a log shape. Then, carefully slice the log into 8 equal round pieces. Using your fingers, gently fan out each round into a rosette shape by tucking the edges under to create the cruffin’s characteristic layered look.
  3. Heat the Oil: Pour vegetable oil into a deep skillet or heavy-bottomed pot, filling it to about 1 to 2 inches. Heat the oil to 350°F (175°C), using a thermometer to maintain the correct frying temperature.
  4. Fry the Cruffins: Working in batches to avoid overcrowding, carefully place the shaped cruffins into the hot oil seam-side down. Fry each side for 2 to 3 minutes, or until the cruffins are puffed up and golden brown on all sides.
  5. Drain Excess Oil: Remove the fried cruffins using a slotted spoon and place them on a plate lined with paper towels to absorb excess oil while still warm.
