Ingredients

Scale

Cookies

  • 1 ½ cups (333g) salted butter, softened
  • 1 ½ cups (345g) granulated sugar
  • 3 eggs
  • 1 ½ tsp cake batter flavoring
  • pink food coloring, a few drops
  • 4 ½ cups (684g) all-purpose flour
  • 3 tsp baking powder

Frosting

  • 1/4 cup (56g) butter, softened
  • 8 oz cream cheese, room temperature
  • 2 tsp vanilla extract
  • 4 cups (428g) powdered sugar
  • 1 pinch salt
  • milk or heavy cream, a few teaspoons to thin
  • Christmas sprinkles, for decoration

Instructions

  1. Preheat oven: Set your oven to 350°F (180°C) to prepare for baking the cookies.
  2. Cream butter and sugar: In a mixing bowl, beat the softened butter and granulated sugar together using a stand mixer for about 2 minutes until the mixture is light and fluffy.
  3. Add eggs and flavoring: Incorporate the eggs, cake batter flavoring, and a few drops of pink food coloring into the creamed butter and sugar. Mix thoroughly.
  4. Add dry ingredients: Gradually add the all-purpose flour and baking powder to the wet ingredients, mixing until fully combined to form the cookie dough.
  5. Shape cookies: Divide the dough into 3 tablespoon portions, roll each into a ball, then flatten slightly and arrange them spaced on a parchment or silicone lined baking sheet.
  6. Bake cookies: Bake for 9 to 11 minutes, or until the centers puff up and lose their glossy appearance.
  7. Prepare frosting: While cookies cool, whip together the softened butter, cream cheese, and vanilla until smooth and creamy.
  8. Add powdered sugar and thin: Add the powdered sugar one cup at a time to the cream cheese mixture, then add a pinch of salt. Slowly add milk or heavy cream a few teaspoons at a time until you reach your desired frosting consistency.
  9. Pipe frosting and decorate: Transfer the frosting to a piping bag fitted with a round tip. Pipe spirals of frosting onto the still warm cookies starting from the center outward, then immediately sprinkle with Christmas-themed sprinkles.
