Ingredients

Scale

Fruit & Yogurt Mixture

  • 1 1/2 cups chopped strawberries
  • 1 cup plain Greek yogurt
  • 1 tbsp honey
  • 1 tsp vanilla extract

Chocolate Coating

  • 1 cup semi-sweet chocolate chips
  • 2 tbsp coconut oil

Instructions

  1. Prepare the mixture: In a large bowl, combine the chopped strawberries, plain Greek yogurt, honey, and vanilla extract. Mix thoroughly until all ingredients are well incorporated.
  2. Form clusters: Using a spoon, scoop about 2 tablespoons of the yogurt mixture and place it on a parchment paper-lined baking sheet or large plate, forming small clusters. You should be able to make about 10 clusters.
  3. Freeze the clusters: Place the baking sheet with the yogurt clusters into the freezer and freeze for 1 to 2 hours until they are completely frozen and solid.
  4. Melt the chocolate: In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Microwave in 15 to 30-second intervals, stirring between each, until the chocolate is fully melted and smooth.
  5. Dip the clusters: Remove the frozen clusters from the freezer and carefully dip each one into the melted chocolate. Use a spoon to ensure each cluster is fully coated with chocolate. Optionally, sprinkle a little sea salt on top.
  6. Re-freeze the coated clusters: Place the chocolate-coated clusters back onto the parchment-lined baking sheet and return them to the freezer for a few minutes to allow the chocolate to harden and the yogurt to solidify slightly.
  7. Serve and enjoy: Once the chocolate is set, enjoy your delicious frozen chocolate strawberry yogurt clusters as a refreshing treat.

Notes

  • Ensure the clusters are completely frozen before dipping in chocolate to avoid melting the yogurt mixture.
  • Use parchment paper to prevent sticking and make cleanup easier.
  • You can substitute honey with maple syrup or agave nectar based on preference.
  • Adding a sprinkle of sea salt after chocolate coating balances sweetness and enhances flavor.
  • Store leftover clusters in an airtight container in the freezer for up to a week.
