Instructions

  1. Prepare the Oven and Pan: Preheat your oven to 350°F (180°C). Line a 20 cm (7.9 inch) loaf pan with parchment paper or grease it lightly with oil to prevent sticking.
  2. Mash Bananas: In a large mixing bowl, mash the three ripe bananas thoroughly with a fork until smooth and free of lumps to create a uniform base for the batter.
  3. Mix Wet Ingredients: Stir in the nut butter and eggs into the mashed bananas until well combined.
  4. Add Sweetener and Flavor: Incorporate the granular sweetener of choice, vanilla extract, and sea salt. Whisk or stir the mixture vigorously for about two minutes to ensure all ingredients are mixed and the batter is smooth.
  5. Combine Dry Ingredients: Add the oat flour (or oat flour plus protein powder if using), cocoa powder, and baking powder to the wet mixture. Stir well until just combined, then gently fold in the chocolate chips to evenly distribute.
  6. Bake the Bread: Pour the batter into the prepared loaf pan and optionally sprinkle additional chocolate chips on top. Bake in the preheated oven for 30 to 40 minutes. Check doneness by inserting a toothpick in the center – it should come out clean or with minimal crumbs.
