This Chicken Cordon Bleu Soup is a comforting and creamy soup inspired by the classic chicken cordon bleu dish. Ingredients

Scale

Soup Base

  • ¼ cup unsalted butter
  • 1 small yellow onion, diced
  • 2 carrots, diced
  • 2 ribs celery, diced
  • 1 tablespoon minced garlic
  • 1 teaspoon paprika
  • 1 teaspoon salt, more or less to taste
  • ½ teaspoon pepper
  • 1 (32 oz) box chicken broth
  • 1 pint heavy cream
  • 2 tablespoons Dijon mustard

Protein

  • 4 cups cooked and cubed chicken (about 1 store-bought rotisserie chicken or leftover holiday turkey)
  • 1 (8 oz) package cubed ham (leftover holiday ham works great)

Dairy & Toppings

  • 1 (8 oz) block cream cheese, cubed and softened to room temperature
  • Swiss cheese, shredded for serving
  • Homemade or store-bought croutons for serving

Instructions

  1. Melt Butter and Sauté Vegetables: In a large stockpot over medium heat, melt the unsalted butter. Add the diced onion, carrots, celery, minced garlic, paprika, salt, and pepper. Stir regularly and cook until the carrots have softened, approximately 10 minutes.
  2. Add Liquids and Proteins: Pour in the chicken broth and heavy cream. Stir in the Dijon mustard, cooked cubed chicken, and cubed ham. Continue stirring to combine all ingredients thoroughly.
  3. Incorporate Cream Cheese and Heat Through: Add the cubed cream cheese to the pot. Cook the soup over medium heat, stirring regularly until the soup is hot and the cream cheese has melted completely, ensuring a smooth and creamy texture.
  4. Adjust Seasoning and Serve: Taste the soup and adjust salt or pepper as needed. Ladle the soup into bowls and top with shredded Swiss cheese and croutons before serving for added flavor and texture.

Notes

  • You can substitute leftover holiday turkey for the rotisserie chicken for great flavor.
  • Leftover holiday ham is perfect in this soup, but you can also use any cooked ham.
  • For a thicker soup, reduce the amount of chicken broth slightly or add more cream cheese.
  • Store any leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently on the stovetop to avoid curdling the cream.
