For the Berries:
- 3 lbs large fresh strawberries
For the Filling:
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1½ cups heavy whipping cream, cold
- ¼ cup graham cracker crumbs
- Prep Strawberries – Slice strawberries lengthwise, keeping stems. Cut a tiny slice off the bottom so they sit flat. Carve a small hollow in the center using a melon baller.
- Make Filling – Whip heavy cream until stiff peaks form (about 3-4 mins). Beat cream cheese, sugar, and vanilla until fluffy. Fold whipped cream into the cream cheese mixture.
- Assemble – Fill a piping bag with the cheesecake mixture. Pipe generously into the strawberry hollows. Sprinkle with graham cracker crumbs. Chill for 1 hour before serving.
Notes
- Keep berries and filled strawberries cold
- Don’t hollow berries too deep
- Beat cream cheese until completely smooth
- Can be prepped 4 hours ahead; add crumbs just before serving
