This Irresistible Buffalo Chicken Mac and Cheese combines creamy, spicy buffalo sauce with tender chicken and cheesy rotini pasta, topped with crunchy panko breadcrumbs for a deliciously satisfying comfort meal.

Ingredients

Scale

For the Pasta and Chicken

  • 12 oz rotini pasta
  • 2 cups cooked, diced boneless skinless chicken breast

For the Cheese Sauce

  • 1/2 cup buffalo sauce
  • 1 cup sharp cheddar cheese, shredded
  • 4 oz cream cheese
  • 2 tbsp butter
  • 1/4 cup all-purpose flour
  • 2 cups milk

For Topping and Garnish

  • 1 cup panko breadcrumbs (for topping)
  • 2 green onions, sliced (for garnish)

Instructions

  1. Cook the Pasta: Boil salted water and cook rotini until al dente according to package instructions. Drain and set aside to prevent overcooking.
  2. Prepare the Chicken: In a skillet over medium heat, sauté diced chicken seasoned with salt and pepper until golden brown and heated through, about 5-7 minutes.
  3. Create Cheese Sauce: In a saucepan, melt butter over medium heat. Add flour to form a roux, stirring constantly for 1-2 minutes. Gradually whisk in milk until the mixture is smooth and thickened. Stir in cream cheese until melted, then add shredded cheddar cheese and buffalo sauce. Mix thoroughly until creamy and smooth.
  4. Combine Everything: Mix the cooked pasta with the cheese sauce and sautéed chicken until everything is evenly coated with the spicy, cheesy sauce.
  5. Add Toppings: Transfer the mixture to a greased baking dish, spreading it evenly. Sprinkle panko breadcrumbs evenly over the top for a crunchy finish.
  6. Bake: Preheat the oven to 350°F (175°C). Bake the assembled dish for 20-25 minutes until the cheese is bubbly and the breadcrumbs are golden brown.
  7. Garnish and Serve: Remove from oven and sprinkle sliced green onions over the top before serving for a fresh, mild onion flavor.

Notes

  • Use rotini or other short pasta to hold the sauce well.
  • Adjust the amount of buffalo sauce according to your spice preference.
  • For a crispier topping, you can toss panko breadcrumbs with a little melted butter before sprinkling.
  • Leftovers keep well refrigerated for up to 3 days and reheat nicely in the oven or microwave.
  • Substitute chicken with cauliflower for a vegetarian twist.
