  • 250g of onions, sliced thinly
  • 1 cup (240ml) of chicken or vegetable stock
  • 1 tablespoon of good quality balsamic vinegar
  • ½ tablespoon of maple syrup

Dip Base

  • 350g of fat free cottage cheese
  • 2 spring onions, sliced (green part only)
  • ½ teaspoon of onion powder
  • Salt and black pepper to season

Instructions

  1. Heat the Butter: Heat a frying pan over medium-high heat and add the butter, allowing it to melt completely.
  2. Cook the Onions: Add the thinly sliced onions to the melted butter and cook until they become translucent, stirring occasionally.
  3. Caramelize the Onions: Lower the heat to medium-low and gradually add the stock, letting it reduce slightly before adding more. Continue this process for about 25 minutes to soften and deeply caramelize the onions without rushing or burning.
  4. Add Flavor Enhancers: Once the onions are deeply caramelized, stir in the balsamic vinegar and maple syrup to deepen their color and flavor. Remove from heat and set aside to cool.
  5. Blend the Cottage Cheese: Using a mini food processor, blend the fat-free cottage cheese until smooth and free of lumps for a creamy base.
  6. Combine Ingredients: Transfer the blended cottage cheese into a bowl and mix in the cooled caramelized onions, sliced green onions, and onion powder until the mixture is evenly combined.
  7. Season the Dip: Taste the dip and season with salt and freshly ground black pepper according to preference.
