  • 1 lb steak tips (sirloin or ribeye), cut into bite-sized pieces
  • 1 tbsp Cajun seasoning (plus more to taste)
  • Salt and black pepper to taste
  • 1 tbsp olive oil
  • 2 tbsp butter (divided)

For the Rigatoni Parmesan Sauce:

  • 10 oz rigatoni pasta
  • 1 cup heavy cream
  • 3/4 cup freshly grated Parmesan cheese
  • 2 garlic cloves, minced
  • 1/2 cup shredded mozzarella or Fontina cheese (optional)

Instructions

  1. Sear the Steak: Season steak tips with Cajun seasoning. Sear in a skillet with olive oil and 1 tbsp butter until browned. Set aside.
  2. Cook the Pasta: Boil salted water and cook rigatoni until al dente. Reserve 1/2 cup pasta water.
  3. Make the Sauce Base: Sauté garlic in remaining butter. Add heavy cream and simmer.
  4. Add the Cheese: Stir in Parmesan and optional mozzarella or Fontina. Season with salt, pepper, and more Cajun seasoning.
  5. Combine: Toss rigatoni in the sauce, adding pasta water as needed. Fold in steak tips.
  6. Serve: Plate and garnish with Parmesan and black pepper.

Notes

  • You can adjust the spice level by adding more or less Cajun seasoning.
  • For a lighter version, you can use half-and-half instead of heavy cream.
