For the Steak Tips:
- 1 lb steak tips (sirloin or ribeye), cut into bite-sized pieces
- 1 tbsp Cajun seasoning (plus more to taste)
- Salt and black pepper to taste
- 1 tbsp olive oil
- 2 tbsp butter (divided)
For the Rigatoni Parmesan Sauce:
- 10 oz rigatoni pasta
- 1 cup heavy cream
- 3/4 cup freshly grated Parmesan cheese
- 2 garlic cloves, minced
- 1/2 cup shredded mozzarella or Fontina cheese (optional)
- Sear the Steak: Season steak tips with Cajun seasoning. Sear in a skillet with olive oil and 1 tbsp butter until browned. Set aside.
- Cook the Pasta: Boil salted water and cook rigatoni until al dente. Reserve 1/2 cup pasta water.
- Make the Sauce Base: Sauté garlic in remaining butter. Add heavy cream and simmer.
- Add the Cheese: Stir in Parmesan and optional mozzarella or Fontina. Season with salt, pepper, and more Cajun seasoning.
- Combine: Toss rigatoni in the sauce, adding pasta water as needed. Fold in steak tips.
- Serve: Plate and garnish with Parmesan and black pepper.

- You can adjust the spice level by adding more or less Cajun seasoning.
