Ingredients

Scale

Chicken and Sauce

  • 2 boneless, skinless chicken breasts
  • 1/2 cup hot sauce (such as Frank’s RedHot)
  • 4 tablespoons unsalted butter, melted
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • Salt and pepper, to taste

Wrap and Toppings

  • 4 large flour tortillas or wraps
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/2 cup shredded cheddar cheese or a blend of cheddar and Monterey Jack
  • 1/4 cup crumbled blue cheese (optional)
  • 1/4 cup ranch or blue cheese dressing

Instructions

  1. Prepare the Buffalo Sauce: In a small bowl, whisk together the hot sauce, melted butter, garlic powder, paprika, salt, and pepper until well combined.
  2. Cook the Chicken: Season the chicken breasts lightly with salt and pepper. Grill, bake, or pan-fry them over medium heat until fully cooked through and no longer pink inside, about 6-7 minutes per side depending on thickness. Let the chicken rest for a few minutes, then shred or dice it into bite-sized pieces.
  3. Toss Chicken in Buffalo Sauce: Transfer the shredded chicken to a bowl and pour the prepared buffalo sauce over it. Toss thoroughly to coat all the chicken evenly in the sauce.
  4. Warm the Tortillas: Choose one of these warming methods: stovetop warming by placing tortillas on a hot skillet 30 seconds each side, microwave by wrapping in a damp paper towel and heating 15 seconds intervals until warm, or oven warming on a baking sheet at 200°F for 2-3 minutes. Warm tortillas become pliable and easier to roll.
  5. Assemble the Wraps: Lay each warm tortilla flat. Spread a generous layer of buffalo chicken mixture in the center. Top with shredded lettuce, diced tomatoes, shredded cheese, and crumbled blue cheese if using.
  6. Add Dressing and Roll: Drizzle ranch or blue cheese dressing over the fillings. Fold the bottom edge of the tortilla up over the fillings, then fold in the sides and roll tightly to create a compact wrap ready to serve.
  7. Serve or Store: Serve wraps immediately for the best texture. To store, wrap individually in foil or plastic wrap and refrigerate up to 3-4 days. Reheat in a 350°F oven for 10-15 minutes wrapped in foil or in a skillet until warmed through.

Notes

  • For milder flavor, reduce the hot sauce or increase the butter in the buffalo sauce.
  • Use gluten-free tortillas to make this recipe gluten-free.
  • Leftover buffalo chicken can be stored separately and used in salads or sandwiches.
  • Make ahead the buffalo chicken filling to save time on busy days.
  • Add avocado slices or shredded carrots for extra texture and nutrition.
  • Blue cheese dressing can be substituted with ranch if preferred.
