Blue Cheese Dressing

  • 1/2 cup plain Greek yogurt
  • 1/4 cup crumbled blue cheese
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons water (more as needed)
  • 1 teaspoon apple cider vinegar
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon onion powder
  • 1 tablespoon chopped fresh dill
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Sauté vegetables: Heat the olive oil in a large skillet over medium-high heat. Add diced onion, celery, carrots, salt, and pepper and sauté until tender, about 5-6 minutes. Add the grated or minced garlic and sauté for another minute. Push the vegetables to one side of the skillet.
  2. Cook ground chicken: Add the ground chicken to the skillet and crumble it with a wooden spoon or spatula. Season with salt and pepper. Cook until the chicken is browned and no longer pink. Stir the vegetables and chicken together.
  3. Simmer sauce: Pour in Worcestershire sauce, tomato sauce, and buffalo sauce. Stir everything together, then cover the skillet with a lid and reduce heat to medium-low. Let the mixture simmer for 15 minutes to meld flavors.
  4. Prepare blue cheese dressing: While the meat simmers, combine Greek yogurt, crumbled blue cheese, lemon juice, water, apple cider vinegar, garlic powder, onion powder, fresh dill, salt, and pepper in a small bowl. Whisk thoroughly and adjust seasoning. If too thick, thin with additional water one teaspoon at a time until desired consistency is reached.
  5. Assemble sloppy joes: Toast or warm the buns. Spoon the buffalo chicken filling onto each bun, then top generously with blue cheese dressing. Serve immediately.
