A simple yet elegant side dish featuring crisp-tender green beans sautéed in nutty browned butter and topped with a crunchy, aromatic homemade hazelnut dukkah spice blend. This recipe combines classic Middle Eastern flavors with an easy stovetop cooking method, making it perfect for holiday entertaining or quick weeknight dinners.

Ingredients

Scale

Green Beans

  • 1 pound fresh green beans, trimmed
  • 4 tablespoons unsalted butter
  • Water for blanching
  • Ice for ice bath

Hazelnut Dukkah

  • 1/2 cup hazelnuts
  • 1 tablespoon Everything Bagel Spice (includes toasted sesame seeds, garlic, salt)
  • 1 teaspoon garam masala

Instructions

  1. Prepare the Dukkah: Preheat your oven to 350°F (175°C). Spread the hazelnuts evenly on a sheet pan and toast for 8 to 10 minutes until fragrant and roasted. Let them cool slightly, then rub some skins off using a clean kitchen towel. Finely chop the toasted hazelnuts, then mix with Everything Bagel Spice and garam masala. Set aside or store in an airtight container.
  2. Blanch the Green Beans: Trim the tough ends off the green beans. Bring a large pot of salted water to a boil, then add the green beans. Blanch for 4 minutes until crisp-tender, then immediately transfer to an ice bath to stop the cooking process. Drain and pat dry thoroughly.
  3. Brown the Butter: In a large skillet over medium heat, melt the butter and continue cooking it until it turns golden brown and emits a nutty aroma, about 3 to 4 minutes. Watch closely to prevent burning.
  4. Sauté the Green Beans: Add the blanched green beans to the browned butter in the skillet. Sauté for 4 to 5 minutes, stirring occasionally, allowing the beans to brown slightly and absorb the butter’s rich flavor.
  5. Serve: Transfer the browned butter green beans to a serving dish and sprinkle generously with the hazelnut dukkah. Serve warm alongside your favorite protein or main dish.

Notes

  • The Everything Bagel Spice blend adds toasted sesame seeds and garlic, ideal for authentic dukkah flavor without extra toasting.
  • To toast sesame seeds separately, add them to the oven for the last 3 minutes of hazelnut toasting.
  • Dukkah can be stored in an airtight container in the fridge or freezer for up to 1 month.
  • Use fresh green beans for the best texture and flavor; avoid frozen for this recipe.
  • Browned butter should be watched closely to avoid burning and bitterness.
