Ingredients
- 2 medium ripe bananas
- 1/2 cup creamy peanut butter
- 1 cup milk chocolate candy wafers (or dark chocolate chips / almond bark for melting)
- Slice the bananas: Peel the bananas and cut them into 3/8″ to 1/2″ thick slices, ensuring they are even for better assembly and freezing.
- Assemble with peanut butter: Take one banana slice and add a generous smear of peanut butter on top, then sandwich it with another banana slice to create a bite-sized sandwich.
- Freeze the banana bites: Place the assembled banana-peanut butter bites on parchment paper and freeze them just until the banana and peanut butter are firm and stuck together, which usually takes about 30 minutes. This step makes coating with chocolate cleaner and easier.
- Melt the chocolate: While the banana bites freeze, melt your choice of chocolate candies, chips, or almond bark using a double boiler or microwave in 20-second intervals stirring frequently until smooth.
- Coat the banana bites: Spear each frozen banana bite with a toothpick and dip it completely into the melted chocolate to coat. Place each coated piece onto a parchment-lined baking pan.
- Set the chocolate coating: Return the chocolate-coated banana bites to the freezer and allow the chocolate to harden fully, approximately 15-20 minutes.
- Serve and enjoy: Once set, remove from the freezer and enjoy immediately as a refreshing frozen snack, or store them in an airtight container in the freezer for later.
Notes
- Use ripe but firm bananas to avoid mushy bites.
- For a dairy-free version, use vegan chocolate chips.
- Peanut butter can be substituted with almond or cashew butter.
- Keep the bites frozen until serving to maintain texture.
- Use parchment paper to prevent sticking during freezing and chocolate setting.
