  • 1/2 cup brown sugar, packed

  • 1 cup mashed ripe banana, about 2 and 1/2 medium bananas
  • 1 cup all-purpose flour, spooned and leveled
  • 1/2 cup old fashioned oats, blended into a powder
  • 1 teaspoon baking soda
  • 1 & 1/2 teaspoons baking powder
  • 3/4 teaspoon kosher salt
  • 1/2 cup sour cream
  • 1/4 teaspoon cinnamon, optional
  • 1/8 teaspoon nutmeg, optional
  • 1/8 teaspoon cloves, optional
  • 1/2 to 3/4 cup toasted pecans or walnuts, optional

Instructions

  1. Preheat the Oven: Preheat oven to 350 degrees F. Prepare a 9×5 inch loaf pan with nonstick spray or parchment paper.
  2. Prepare Nuts: If using nuts, toast them in the oven and set aside to cool.
  3. Mix Butter and Sugars: In a bowl, beat butter, brown sugar, and granulated sugar until fluffy.
  4. Add Eggs and Vanilla: Mix in eggs and vanilla until well combined.
  5. Mash Bananas: Mash ripe bananas and add to the butter mixture.
  6. Add Dry Ingredients: Combine flour, oat powder, baking soda, baking powder, salt, and optional spices. Stir into the wet mixture.
  7. Include Sour Cream: Fold in sour cream and nuts if desired.
  8. Bake: Pour batter into the pan and bake for 55-65 minutes until a toothpick comes out clean.
