Honey Syrup
- 2 oz. water
- 1 oz. honey
- 1 tsp. granulated sugar
Mocktail
- 1 sprig fresh rosemary
- 2 oz. alcohol-free gin
- 1 oz. fresh lemon juice
- Ice, 2 to 3 cubes
- Club soda, for topping off

- Make Honey Syrup: In a small heatproof bowl or cup, microwave the water and honey together until the honey is completely dissolved and the mixture is smooth, about 30 seconds. Stir well and allow it to cool to room temperature. Alternatively, heat the water and honey in a small pot over medium-low heat, bringing it to a simmer while stirring until the honey dissolves fully.
- Prepare Sugared Rosemary: Pour 1 oz. of the honey syrup into a shallow dish. Dip the fresh rosemary sprig into the syrup, tapping gently to remove excess. In another shallow dish, pour the granulated sugar. Roll the syrup-coated rosemary in the sugar until coated generously.
- Set Sugared Rosemary: Transfer the sugared rosemary to a plate and let it sit at room temperature for about 45 minutes to set. You may also refrigerate it for up to one day if preparing in advance.
- Shake the Mocktail: In a cocktail shaker, add the alcohol-free gin, fresh lemon juice, 1 oz. of honey syrup, and 2 to 3 ice cubes. Shake vigorously for about 20 seconds until the shaker feels very frosty on the outside.
- Strain and Serve: Strain the mixture into a chilled stem glass. Top off gently with club soda to add a refreshing fizz. Garnish the drink with a twist of lemon peel and the sugared rosemary sprig for an aromatic finish.
