These Baked Feta Potatoes are a delicious and savory dish that combines crispy roasted potatoes with flavorful feta cheese, garlic, and herbs. A perfect side dish or even a main course for a cozy meal.

Potatoes:

  • 2 large baking potatoes, cubed

Seasonings:

  • 1 200g block of feta
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 0.5 tsp red chili flakes

Additional:

  • 1 head of garlic (top cut off)
  • 1 lemon, quartered
  • 1 tbsp honey
  • 1/4 cup | 20g fresh basil, shredded

Instructions

  1. Preheat the oven: Preheat your oven to 200C | 390F.
  2. Prepare Potatoes: Cube the potatoes, par-boil for 6-8 minutes, then drain and steam dry for 2-3 minutes.
  3. Season Potatoes: Place the potatoes in a baking dish, add thyme, oregano, salt, pepper, olive oil, and coat evenly.
  4. Roast Potatoes: Roast for 30-40 minutes until golden.
  5. Add Feta: Place feta in the middle of the tray, squeeze lemon over it.
  6. Prepare Garlic: Remove garlic, squeeze out of skins, and mash.
  7. Final Roasting: Return the dish to the oven for 15 minutes.
  8. Finish Dish: Mix garlic, lemon juice, and basil into the potatoes, drizzle with honey and more basil.
  9. Serve: Enjoy your Baked Feta Potatoes!
