Chicken and Hot Honey:

  • 2 large eggs, beaten
  • 2 tablespoons hot sauce
  • 2 pounds chicken breast tenderloins
  • extra virgin olive oil, for drizzling
  • 1/2 cup honey
  • 23 tablespoons hot sauce
  • 13 teaspoons cayenne pepper
  • 3/4 teaspoon chipotle chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • sea salt
  • fresh thyme, cilantro, or parsley, for serving

Instructions

  1. Preheat the Oven: Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. Prepare Coating: Crush the cornflakes, parmesan, paprika, onion powder, and garlic powder in a food processor. Coat the chicken in beaten eggs and hot sauce, then dredge in the cornflake mixture.
  3. Bake Chicken: Place the coated chicken on the baking sheet, drizzle with olive oil, and bake for 20-25 minutes until crispy.
  4. Make Hot Honey: While the chicken bakes, combine honey, hot sauce, cayenne, chili powder, garlic powder, and onion powder in a sauce pot and warm.
