Instructions

  1. Prepare the dough: In a mixing bowl, combine the masarepa, salt, and warm water. Mix thoroughly until ingredients are blended and let the mixture rest for 5 minutes to allow the cornmeal to fully hydrate.
  2. Knead the dough: After resting, mix the dough again until it is smooth and has a consistency similar to playdough. It should not stick to your hands. If it’s too dry, add water by the tablespoon and knead until smooth.
  3. Shape the patties: Using your hands, form the dough into 8 to 10 small round patties, about 4 to 5 inches in diameter and ½ inch thick. Ensure they are evenly shaped for uniform cooking.
  4. Cook the arepas: Heat a grill pan or cast iron skillet over medium heat and lightly grease with oil or butter. Cook the arepas on each side until a golden-brown crust forms and they are heated through, approximately 10 minutes total. The exterior will become crisp while the interior remains soft or slightly hollow.
  5. Optional finishing: For extra crispiness, you can finish cooking them in an oven or air fryer preheated to 350°F (177°C) for 8 to 10 minutes after pan-cooking.
  6. Serve: Let the arepas cool slightly before serving. They can be eaten plain or split open and filled with your favorite ingredients such as cheese, meats, or avocado.
