  • 1 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 tablespoon apple pie spice
  • 1 teaspoon baking powder

For topping:

  • 1/4 cup melted butter
  • 1/2 cup sugar

Instructions

  1. Cook the apple cider: Add the apple cider to a saucepan over medium heat, bring to a boil, then simmer until reduced by half, about 20-30 minutes. Set aside to cool.
  2. Preheat and prepare: Preheat oven to 350 degrees. Butter or grease a 9×5 loaf pan.
  3. Mix the wet ingredients: Beat butter and brown sugar until light and fluffy. Add egg and vanilla, mix to combine.
  4. Add dry ingredients: Incorporate flour, apple pie spice, baking powder, baking soda, salt, and reduced apple cider. Stir until just combined.
  5. Bake: Pour batter into the loaf pan and bake for 50 minutes or until a tester comes out clean.
  6. Cool and top: Cool in the pan for 15 minutes, then transfer to a rack. Brush with melted butter and coat with a mixture of sugar and cinnamon.
  7. Serve: Let the bread cool for 1 hour before slicing and serving.
