  • 1 cup corn kernels (fresh or frozen)

Other:

  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup beef broth
  • 1 cup shredded cheddar cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tbsp olive oil

Instructions

  1. Preheat Oven: Preheat the oven to 375°F (190°C).
  2. Cook Ground Beef: Brown the ground beef in a skillet, then set aside.
  3. Sauté Onion and Garlic: Sauté chopped onion and minced garlic until translucent.
  4. Cook Vegetables: Add potatoes, carrots, and celery to the skillet and cook briefly.
  5. Add Remaining Ingredients: Combine corn, cooked beef, tomatoes, and broth in the skillet. Season with salt, pepper, thyme, and rosemary.
  6. Bake: Transfer mixture to a baking dish, cover, and bake for 30 minutes. Uncover, add cheese, and bake for additional 10-15 minutes until cheese is golden.
