Vegetables:
1 medium onion, chopped
2 cloves garlic, minced
3 cups diced potatoes
2 cups diced carrots
1 cup diced celery
1 cup corn kernels (fresh or frozen)

1 can (14.5 oz) diced tomatoes, undrained
1 cup beef broth
1 cup shredded cheddar cheese
1 tsp salt
1/2 tsp black pepper
1 tsp dried thyme
1 tsp dried rosemary
1 tbsp olive oil
Instructions
Preheat Oven: Preheat the oven to 375°F (190°C).
Cook Ground Beef: Brown the ground beef in a skillet, then set aside.
Sauté Onion and Garlic: Sauté chopped onion and minced garlic until translucent.
Cook Vegetables: Add potatoes, carrots, and celery to the skillet and cook briefly.
Add Remaining Ingredients: Combine corn, cooked beef, tomatoes, and broth in the skillet. Season with salt, pepper, thyme, and rosemary.
Bake: Transfer mixture to a baking dish, cover, and bake for 30 minutes. Uncover, add cheese, and bake for additional 10-15 minutes until cheese is golden.
