Puff Pastry:

  • 2 tablespoons olive oil
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 10 oz cremini mushrooms, sliced
  • 1 teaspoon fresh thyme leaves (or 1/2 tsp dried)
  • Salt and black pepper, to taste
  • 1/4 cup dry white wine (optional)
  • 8 oz cream cheese
  • 3/4 cup Parmesan cheese, finely grated
  • 1/2 cup Gruyère cheese, grated
  • 1 teaspoon Dijon mustard (optional)
  • 2 large eggs, divided
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven: Preheat oven to 350°F (180°C). Line a baking tray with parchment paper.
  2. Sauté onions and mushrooms: In a large skillet, heat olive oil and butter. Add diced onion and cook until soft. Stir in garlic and mushrooms. Sauté until browned.
  3. Add seasonings: Add thyme, salt, pepper, and wine. Cook until absorbed.
  4. Prepare filling: Stir in cream cheese, Parmesan, and Dijon. Remove from heat and add Gruyère.
  5. Combine filling: Add beaten egg to the filling and mix well. Let cool.
  6. Prepare pastry: Unroll puff pastry and cut strips on each side. Spread filling down the center and braid pastry.
  7. Bake: Brush with egg and bake for 20–22 minutes until golden.
  8. Serve: Garnish with parsley and serve warm.
