  • 1 cup chunky salsa

For the Enchiladas:

  • 1 (10-ounce) can red enchilada sauce
  • 8 (8-inch) flour tortillas (corn can be used for a more traditional option)
  • 1 (8-ounce) package Borden® Cheese Thick Cut Shredded Four Cheese Mexican

Instructions

  1. Preheat the oven: Preheat the oven to 350°F and lightly spray a 9×13-inch baking dish with nonstick cooking spray.
  2. Brown the beef: In a large skillet, brown the ground beef over medium-high heat. Drain excess fat, return to skillet over medium-low heat, then stir in salsa until heated through. Remove from heat.
  3. Prepare the dish: Pour half of the enchilada sauce into the baking dish.
  4. Fill and roll: Warm tortillas, add meat mixture down the center of each, top with cheese, roll tightly, and place seam side down in the dish.
  5. Bake: Pour remaining sauce over the enchiladas, sprinkle with remaining cheese, cover with foil, and bake for 30-35 minutes.
