  1. Preparation: Preheat your oven to 350˚F (175˚C). Line the bottoms of two 9-inch cake pans with parchment paper. Do not grease the sides, as this helps the cake cling to the sides for better rising.
  2. Making the Sponge Cake:

    1. Whip the Eggs and Sugar: In a stand mixer fitted with a whisk attachment, beat 6 large eggs on high speed for 1 minute until frothy. Gradually add the granulated sugar while the mixer runs, and continue beating for 8–10 minutes until the mixture becomes pale, thick, and fluffy.

    2. Incorporate the Dry Ingredients: In a separate bowl, whisk together the all-purpose flour and baking powder. Sift the dry ingredients into the egg mixture in three batches.
